All polyvalent tanks can be fitted with the "NonStop" system patented by DIMA for pre-draining whey without stopping or interrupting the stirring action. For firm curd cutting, DIMA offers the DM02 curd cutter with horizontal disk that can be mounted directly onto the DIMA kneading machines, onto the SP31 curd feeder or onto trestles with adjustable height.CUTTING AND KNEADING FIRM CURD DIMA kneading machines can handle any kind of pasta filata, from the types with a low moisture content, such as pizza-cheese, provolone, caciocavallo, or cheese to ripen, to the soft types with a very high moisture content, such as mozzarella made either with cow’s or buffalo milk. For firm curd cutting, DIMA offers the DM02 curd cutter with horizontal disk that can be mounted directly onto the DIMA kneading machines, onto the SP31 curd feeder or onto trestles with adjustable height.MOULDING Suitable both for small dairies and dairy industries, DIMA moulding machines can cater for a variety of necessities. They are specifically designed for pasta filata cheese.COOLING AND SALTING DIMA produces two ranges of tanks for cooling. The ranges differ in terms of drive system adopted for the baskets conveying the product. The "LR" series features a pendulum type drive system, and the "HL" series the patented DIMA drive system. Depending on the treatment to which the product will be subjected, DIMA builds tanks for brine-salted cheeses, namely the "BL" series or the DM50 automatic dry salting machine.PRODUCT HANDLING AND TRANSFER TO THE PACKAGING MACHINES Suitable both for small dairies and dairy industries, DIMA moulding machines can cater for a variety of necessities.
