Almac s.r.l., leading company in the design and construction of machines, plants and automations for the “pasta filata” cheeses industry, thanks to the company management experience and its always sensitive to market evolution policy, represents a preferential partner for the main Italian and foreign food industries.The excellent level reached by our plants and the capacity to offer a 360° technical-technological consulting service, allowed ALMAC to become a reliable partner of the most important international producers.Almac s.r.l., leading company in the design and construction of machines, plants and automations for the “pasta filata” cheeses industry, thanks to the company management experience and its always sensitive to market evolution policy, represents a preferential partner for the main Italian and foreign food industries.The interest of our company, operating in the dairy field since many years, is, since the beginning, aimed to that productive process phase included between milk coagulation until its transformation into cheese, thus manufacturing plants from the cheese vats discharge until the product packing. The type of cheese for which we can boast a long tradition (confirmed also by the prestigious marks of our Clients) is the “Pasta Filata” one (Mozzarella, Pizza Cheese, Provolone, Kasar, etc. ).During the years, we designed several types of productive lines, either for the processing of “fresh” paste filate, with a high moisture content (i.e. buffalo’s or cow’s milk mozzarella), or for “cooked” paste filate, having a low moisture content and a high fibrosity, peculiar features of the cheese suitable for maturing (i.e. Provolone, Caciocavallo, etc.).The excellent level reached by our plants and the capacity to offer a 360° technical-technological consulting service, allowed ALMAC S.R.L. to become a reliable partner of the most important international pasta filata producers, among whom we can mention: Kraft/Invernizzi Caravaggio, Galbani S.p.a., Gennaro Auricchio S.p.A., Groupe Lactel, Groupe Lactalis, Latteria Soresina S.c.a r.l., Pinar Süt Mamülleri San. The Products

OUR PRODUCTION LINESMOZZARELLA PRODUCTION LINES: for fresh paste filate with a high moisture content. PIZZA-CHEESE PRODUCTION LINES: for paste filate destined either to industrial or to hand-made pizza dressing. PROVOLONE, KASHKAVAL, KASAR PRODUCTION LINES: for paste filate destined to an adjustable ripening phase. CLIPPED CHEESE PRODUCTION LINES: either for melted products or for pasta filata, obtained by extrusion and packed by a clipping machine. SPECIAL MACHINES: special products, obtainable by the most innovative technologies, also upon Client’s specific request.For the first three lines, according to the adopted technology, Almac proposes two solutions:The recommended line for a citric or mixed ripening (pasta acidification time included in a range between 30 and 60 min) is composed by the following equipment: curd draining and ripening automatic group; curd accumulation dosing vat; batch-conveyor mod. TD2; The recommended line for just a fermentative type of pasta ripening (pasta acidification time included in a range between 2 and 4 hours) is composed by the following equipment: draining roller ripening trolleys trolleys hydraulic overturner curd accumulation dosing vat batch-conveyor mod. TD2.
